Baby's First Diet (aka Beth's Binging Bonanza Begins)
Yesterday, under the suggestion of a few friends, i went to Bastyr's student clinic to find out about my digestion issues.

Seems that food allergies/intolerances is the popular diagnosis for a wide variety of aliments these days.  My case is no exception.

But what am i intolerant to?
Best way to know is to follow the Elimination Diet.
That doesn't sound too difficult.       <Riiiiiiight....... ah, good ol' useful denial.>
It's challenging, the quality of your results depends on your ability to adhere to the diet.

After discussing this with some friends, it seems most havent gone through with this strict diet because it takes a couple of months and their negative symptoms were not debilitating enough to bother.  Mine ARE.  for once ill spare you the TMI portion of this entry, but lets just say its bad enough that i am going to do it.  and do it well so i dont have to fucking bother again. 

What i can NOT eat for 2-4 weeks:
-dairy
-wheat
-corn
-citrus
-coffee & black tea
-refined sugars (raw honey is OK)
-eggs
-Soy
-Food additives
-alcohol
-recreational drugs (messes w/ insulin levels)
I dont want to eat meat, and i currently live off bread and cheese, so this is going to be challenging.

H0w does the Bethalope Cope?
By binging on large amounts of processed sugar and stuff i love for a few days while i research this crazyness.  I figure after the hardcore binge ill be more willing to a eat healthy diet post excessive sugar crashing. 
What i bought today in glee:
toaster strudel, caramel icecream, cheezits, pillsbury cinnamon rolls, junior mints, mint chocolate covered oreos, spaghetti & sauce, nutty bars, wine
What am i doing right now?
being a retard by drinking wine to assist with posting this instead of fasting 10 hrs for blood work tomorrow. whoops.

Agh! That sucks. suuuucks.

I've never had to do something like this, but E did when they were trying (and failing) to solve his gut issues with dietary restrictions.

Good luck to you... it sounds like you're going to be eating a lot of veggies and quinoa. And rice! Let me know if you want some recipes.

Are you allowed spelt? Spelt bread is pretty good.

I would LOVE to have some recipes from you.
I started to freak out last night when i was researching recipes, b/c its mostly not what i want to eat. But i know enough about food i think i can make up some stuff.
yea... im not a huge rice fan, but i think i can make some wholesome almond milk in the food processor.

Cool, well, what kind of stuff do you want to eat?

Quinoa? Veggies alone? Will you be allowed any dairy products whatsoever (like kefir and yogurt)?

At least it's summer here, so you get the nice fresh local produce...

spelt bread: relatively easy to find in stores, though "stores" may translate to "PCC and the Food Hole". It's quite tasty, but watch out for bread with stealth wheat in it: a lot of things sold as "spelt" or [especially] "rye" bread are really wheat flour with some of the other grain added for flavour.

You will notice that my "recipes" don't really involve such stuffy notions as "measurements", but hopefully the description is of some use:

hummus: take a large quantity of chickpeas and cook them in a small amount of water (just covering the chickpeas) for a long time, until they are softer than you'd normally want them to be. Throw in some tahini, olive oil, salt, pepper and something sour [see below], and blend till it has the right consistency (highly subjective - when you like it, it's right). Optional additions: parsley (chop and throw in towards the end of boiling the chickpeas), paprika (sprinkle on top at the end) or garlic (if you want it quite sharp, just throw raw garlic in at the start, or if you want it mellower then cook the garlic first).

souring agent: normally hummus has lemon in it, but you can substitute sumac (which I know Marketspice stocks, bless their hearts, and you can probably also find at other stores that have a relatively wide selection of spices) and it works quite well. I've done the same with a few other recipes that call for just a little lemon, and it often works quite well.

finally: if you are allowed white rice, then two things will help you out. Wholefoods stocks a rice-flour pasta that is rather tasty, though steel yourself before checking the price per pound. Also: risotto, which contrary to what most people seem to believe, requires neither chicken stock nor cheese to taste good.

the way you find out what foods you are intolerant of is by slowly adding them back to your diet to see how your body reacts. If your insulin levels are out of wack you might get inaccurate results.

Oh, im sure this will be a place of rantings (probably under lj cut). But im really tired of being so unhealthy, otherwise i wouldn't bother with this extreme journey.
